Raw Cocoa Peanut Butter Bites

I've always been a dessert person: crème brûlée, blueberry pie, pistachio pudding, ginger molasses cookies, strawberry shortcake, apple cinnamon crumble, red velvet cupcakes, local persians, coconut cheesecake... I think you get the point. My list of memorable sweet favourites could go on forever! Of course the problem with many desserts is that they are loaded with refined sugar, and as many of you know, a diet with an excessive amount of sugar can lead to many things like cavities, weight gain, and even larger long-term diseases like diabetes. In my efforts to try and reduce how much sugar I consume, I really appreciate dessert recipes that leave out refined sugar. Tonight after dinner I was craving something sweet, but not something that would take hours to prepare. I'm glad to say that with a few ingredients from my cupboard, I found the perfect combination of simple, delicious and refined sugar-free with these Raw Cocoa Peanut Butter Bites. They take minimal effort, are scrumptious and full of good things like oats, peanut butter and chia seeds. Enjoy them for a nice after dinner treat, or for a mid-afternoon snack, or for an after work pick-me-up... enjoy them any time of day. Raw Cocoa Peanut Butter Bites

Vegan Prep Time: 5 minutes + 45 minutes chill time in fridge Assembly Time: 5 minutes Yield: Approximately 20 small/medium bites Ingredients:

  • 1 cup quick oats

  • 1/3 cup ground flax

  • 1/4 cup unsweetened cocoa powder

  • 2/3 cup coconut flakes (unsweetened)

  • 1/4 cup dark or milk chocolate chips (the mini sized ones work great)

  • 1 tablespoon vanilla extract

  • 1/3 cup local unpasteurized honey or agave nectar

  • 3/4 cup peanut butter (smooth, all natural)

  • 2 tablespoons chia seeds

Directions:

  1. Combine all your ingredients together in a large mixing bowl.

  2. Mix all the ingredients together until everything is evenly combined. You can use your hands here if that makes it easier.

  3. Place the bowl in the fridge to chill for 45 minutes. After 45 minutes, take the mixture out and form into palm sized round bites. It helps if you flatten out the mixture in your palm first before rolling it into a ball. For freshness store the bites in an air tight container in the fridge.
