Peaches n' Cream Smoothie

Are you an oat lover or an oat hater?

Some of my worst oat memories spring back to childhood. I'd already be running late for school, but my mother would prepare a bowl of instant oatmeal and tell me "you need to eat breakfast. Sit down and eat quickly!" "UGHHHH. WHY MOM?" I hated breakfast and I hated oatmeal even more! Why did she do this to me!? I'd barely get through two spoonfuls of the brown mush before bursting out into some melodramatic plea for mercy because I just couldn't eat anymore! Today, I'm an oat lover believe it or not, and some of my best oat memories spring back to just a few days ago when I made this smoothie for breakfast before heading out the door, (still running late - some things never change).

A healthy breakfast is so important, and oats make a great breakfast friend!

I'm a little wiser these days, because I not only understand the importance of eating breakfast, but I also understand how amazing oats are for our bodies!

  • Oats are cheap and affordable

  • Oats are filling and high in nutrients (hello protein & fibre)

  • Oats are your digestive system's best friend (and really help things to move along down the G.I. tract)

  • And oats are incredibly versatile and can be put in just about anything!

This smoothie is one of my favourite smoothies because it's super yummy and super filling. Sometimes the ingredient amounts change from time to time, depending on how large of a smoothie I'm making, i.e. sometimes I add more banana, sometimes I add more peaches or more orange juice. For this recipe I was working with my Magic Bullet, but when I originally created the recipe I was working with my Nutri Bullet, which is definitely a lot bigger. What doesn't change however is my genuine love for this smoothie, because it's just too delicious. Try it out! I promise the oats will leave you feeling full and happy from the inside out.

Peaches N' Cream Smoothie

Vegan Prep Time: 2 minutes Cook Time: 1-2 minutes Yield: 1 medium/large smoothie

Ingredients:

  • 1/2-3/4 cup frozen peaches

  • 1 medium banana

  • 3/4 cup fresh orange juice

  • 3/4 cup nut milk (i.e. almond or cashew, original) *you want equal parts milk and juice

  • 1/2 cup quick oats

  • 1 teaspoon vanilla extract

  • 1-2 ice cubes

  • Optional: 1 teaspoon raw honey (for extra sweetness)

Directions:

  1. Throw all of your ingredients in a blender, (or Magic Bullet/Nutri Bullet), and blend away!
